Are you wondering-how to make muffins? Making muffins isnít difficult and yes, even you can make moist, marvelous muffins as long as you remember one basic rule. Donít over-mix your muffin batter! Over-mixing your muffin batter will result in a tough, less than desirable muffin. Since you are going to all the trouble to make muffins, you might as well do everything in your power to make a moist, mouth-watering muffin; a muffin that will leave your family and friends coming back for more and begging you to make muffins on a regular basis.
Muffins arenít just for weekends or special occasions. Muffins are easy to make and you can even alter the ingredients somewhat to make a healthier muffin. In the recipes that follow, I give you the original recipe and substitution suggestions allowing you to make even healthier muffins. Suggestions like substituting applesauce for at least half of the oil and substituting whole wheat flour for at least a quarter of the flour that is called for. These are just a couple of suggestions to make a healthier muffin.
Remove the butter, eggs and anything else that is currently in the refrigerator or freezer and let them sit out on the counter for a few hours until they come to room temperature. The ingredients will mix together better giving you a better muffin if the ingredients are all the same temperature. Get all the ingredients, measuring spoons, measuring cups, mixer, spoons and spatulas that you will be using out on the counter so you donít waste time going back and forth to the pantry, cupboards and drawers.
Review the recipe to ensure you know what you will be doing and to ensure you have all the ingredients you will need. When you are ready to begin making muffins, turn the oven on so it will be pre-heated when you are ready to place the filled muffin tin(s) into it. Get the muffin tins ready by either lining them with paper liners, greasing or spraying with a non-stick cooking spray.
Begin making muffins by measuring and adding all the dry ingredients into a large bowl and give that a stir, then beat the eggs in a separate bowl and add the remaining wet ingredients. From here, make a well in the middle of the dry ingredients; add the wet ingredients and begin mixing the two together, taking a spatula and running it between the inside of the bowl and the dry ingredients and turning the flour onto the wet ingredients. Continue doing this until all the ingredients are incorporated together. If the recipe calls for nuts, chocolate chips or berries, add them just before all the ingredients are mixed together. This ensures the batter doesnít get over-mixed.
Once the batter is mixed and ready to go, divide it equally between all the muffin tins, ensuring that they arenít more than 2/3's full. Having the batter equally divined will allow the muffins to bake evenly and they will all be ready at the same time.
As soon as the muffin tins are filled, place in the pre-heated oven and set the timer for a few minutes less than the recipe indicates. Oven temperatures vary and so can baking time based on the altitude you are at. Once you know how long it took to bake the muffins, make note of the actual banking time on the recipe for future reference.
